Delicious! It is my son’s favorite pie.

Un cup este egal cu un pahar de 250ml. In rest, sunt sigura ca veti intelege (romanii se descurca in engleza 🙂
Ingredients:
For the pie dough:
– 1 cup ricotta cheese or cream cheese
– 8 spoons vegetable oil
– 8 spoons milk
– 1 egg
– 1 and 1/2 cup flour
– 1 teaspoon vanilla extract
– 1 spoon fresh lemon juice
– 1 teaspoon baking powder
For the filling:
– 900g Italian plums (prune), stoned and sliced in half
– 4 eggs
– 1 cup sugar
– 1 cup ricotta cheese or cream cheese
– 1 cup sour cream
– 1 spoon fresh lemon juice
– 1 teaspoon vanilla extract
– 2 spoons flour
How to do it:
Preheat the oven to 350F (180C). Grease an 32x22cm cake pan and line the bottom with parchment paper.
Note: all ingredients must be at room temperature
For the pie dough:
Sift the flour and the baking powder in a bowl.
In another bowl mix the cheese. Add the egg and continue mixing until fluffy. Gradually add the vegetable oil and milk, vanilla extract and lemon juice. Add the flour and mix until evenly combined. Sometimes it needs more flour – the dough should be like a tart dough.
Roll out the dough and use to line the prepared pan.
For the filling:
Slice plums in half. Place cut side up on top of the dough in rows. Sprinkle with semolina or bread crumbs.
In a bowl beat together the eggs, sugar, lemon juice and vanilla extract. Add the ricotta cheese, sour cream and flour. Mix until evenly combined.
Pour the batter over the plums (like a glaze).
Bake in the preheated oven for 35-40 minutes or more, until a skewer inserted in the center comes out clean.
Let cool in the pan. Dust with confectioners’ sugar. Serve warm or cold.
