Maine baietelul meu incepe scoala, adica junior kindergarten. Va trebui, pe langa altele, sa-i pregatesc si cutiuta cu mancare. Are nevoie de o gustare si de un pachetel pentru pranz. Uite asa, am ajuns sa fac madeleine, pentru ca merg perfect ca si gustare, langa un fruct sau suc.
Am facut reteta simpla, asa cum am gasit-o in cartea „The Williams-Sonoma baking book”. 
As fi facut varianta cu alune sau migdale, dar scoala copilului este peanut free, asa ca a trebuit sa ma abtin. Pana la urma nu am pus nici macar coaja razuita de portocala, ci au ramas clasice de tot. Dar sunt foarte bune!!!

Ingrediente
3 oua intregi, plus un galbenus, la temperatura camerei
1 lingurita extract natural de vanilie
185g zahar fin
155g faina 
un varf de cutit sare
1 lingurita praf de copt
125g unt nesarat, topit si adus la temperatura camerei
coaja razuita de la o lamaie sau portocala (optional)

Metoda:preincalziti cuptorul la 375F (190C) si ungeti cu unt sau ulei formele de medeleine. Daca formele sunt neaderente (non-stick), nu e nevoie sa le ungeti.

Combinati faina cu sarea si praful de copt.
Ouale si galbenusul se spumeaza impreuna cu zaharul, folosind un mixer la viteza medie. Se adauga vanilia si coaja de lamaie sau portocala si se amesteca pana se omogenizeaza aluatul.
Se adauga faina si, ajutandu-va cu o spatula sau lingura de lemn, incorporati-o in compozitia de oua. Adaugati untul ca la maioneza si omogenizati.

Aluatul se pune cu lingura in forme. Fiecare scoica trebuie umpluta cam trei sferturi cu aluat. Se introduc tavile in cuptorul preincalzit si se lasa in jur de  10-15 minute. Dupa 10 minute e bine sa va uitati sa vedeti daca sunt coapte sau nu. Trebuie sa fie usor rumenite si elastice la atingere. 
Cand sunt coapte se scot din tava si se lasa la racit pe un gratar. 

O tava obisnuita are 12 scoici pentru madeleine. Eu am 2 tavi a cate 12 scoici fiecare. In carte scrie ca ies in jur de 22, dar mie mi-au iesit 30 bucati.

Se pot pudra cu zahar pudra.
