Rava Adai – un fel de clatite aperitiv indiene (Indian sour pancakes)

Este una dintre primele mele incercari legate de bucataria indiana, care, trebuie sa recunosc, nu este printre preferatele mele. Dar, pentru diversitate si pentru ca uneori ne place cate ceva nou, am incercat, cu succes, acesta reteta de clatite bine condimentate, servite cu un sos la fel de picant, care se numeste Raita. Opriti-va cu privirea peste ingrediente si peste procesul de preparare, vizualizati cele cateva poze si va invit la treaba. Sunt bune de tot pentru micul dejun sau pentru un snack seara. Se servesc cu catraveciori sau cu sosul Raita.

Ingrediente: 2 cani (de 250ml) gris foarte fin, 2 rosii taiate marunt, un ardei mic iute, o bucatica de ghimbir proaspat razuit, sare dupa gust, un praf de curry sau frunze proaspete daca aveti, 1 cana (aceeasi ca si la gris) de zar sau iaurt, ulei.

INGREDIENTS: 2 cups rava/semolina, 2 chopped tomatoes, 1 green chilli, 1″ piece ginger freshly shredded, salt to taste, curry leave, 1 cup buttermilk or yogurt and oil.

Mod de preparare: Intr-un bowl adaugati toate ingredientele si faceti un aluat semi-solid. Daca este prea gros adaugati putina apa, pentru ca trebuie sa aiba o consistenta lichida (ca si la pancakes). Intr-o tigaie puneti putin ulei, apoi, in mijloc puneti un polonic mic de aluat si presati putin ca sa-i dati o forma de clatita. Coaceti pe ambele parti pana cand capata culoare si devin crocante.

Method: In a mixing bowl add up all the ingredients together and make into a semi-solid batter. Add some water in case the batter is too solid as it should be a liquidy consistency. In a hot frying pan place a handful of batter into the middle and spread it into a circle and flattening it. Pour oil and fry the adai on both the sides till it becomes lightly browned and crispy. 
This Adai is good as an evening snack or great for a morning breakfast treat. Serve with pickle and raita. 

Raita cu ceapa si coriandru: 2 cepe verzi taiate cat mai marunt, 1-2 cani iaurt,(250-500ml), sare dupa gust, 1 lingura frunze de coriandru taiate marunt si un praf de chimion (nu chimen!)

Combinati toate ingredientele si, intr-un vas acoperit, lasati la rece inainte de servire. Reteta de raita este luata de aici.

Green Onion and Coriander Raita: 2 green onions finely chopped, 1- 2 cups plain yogurt (250 – 500ml), salt to taste, 1 tbsp fresh chopped coriander leaves, dash of ground cumin.Combine all ingredients, cover and chill well before serving.
