Placinta ciobanului (Shepherd’s pie) in varianta vegetariana

Nu stiu de ce ii spune asa, dar e buna! De fapt, este un strat de ciuperci, peste care se pune un strat de piure de cartofi, deasupra caruia se presara cascaval, dupa care se da la cuptor pana se rumeneste bine. Mai greu este cu portionatul 🙂 Nu ma intrebati de ce nu se poate servi mai simplu, sub forma de ciupercute langa piure…

Ingrediente: 700g ciuperci (este bine ca macar jumatate din cantitate, daca nu toata, sa fie proaspete, nu din conserva), 2 linguri unt, 2 linguri ulei de masline, 1 ceapa rosie, 3 catei usturoi, 100g vin rosu (daca nu va place ideea puteti folosi supa de pui sau apa),  150 supa sau apa, o lingura de faina, cateva fire de patrunjel proaspat, sare si piper dupa gust. Pentru piure: 6 cartofi, 3 linguri de unt, 75ml lapte, sare si piper, 100g cascaval razuit, 3-4 linguri parmezan.

Mod de preparare: Puneti cartofii la fiert. Faceti un piure, adaugand untul, laptele, sarea si piperul si jumatate din cantitatea de cascaval.

Spalati si feliati ciupercile. Sotati ceapa in unt si ulei, adaugati si usturiul, apoi ciupercile. Stingeti cu vin, adaugati si 100ml supa, apoi lasati la fiert pana cand ciupercile sunt fierte. Potriviti de sare si piper. In cele 50ml de supa sau apa ramase, desfaceti faina, pana devine o pasta. Puneti-o peste ciuperci si amestecati pana cand se leaga ca un sos. Luati de pe foc si puneti patrunjelul. 

Preincalziti cuptorul la 180C. Pregatiti un vas termorezistent, de 20/20cm. Asezati ciupercile pe fundul vasului si nivelati. Puneti deasupra piureul si, din nou, nivelati. Presarati deaspura cascavalul ramas si parmezanul. Dati la cuptor 15-20 minute, pana cand cascavalul de deasupra se rumeneste. 

Va trebuie indemanare si creativitate ca sa scoateti portiile din vas in farfurie, in asa fel incat sa arate bine 🙂
