Rapini (Broccoli italian) cu fasole boabe

O noua reteta vegetariana. Rapini sau Broccoli italian (vezi pozele) este sursa de vitamina C, A si K, contine acid folic, calciu, fier, magneziu si potasiu. Este si o excelenta sursa de fibre. 
Floretele sunt mai delicate decat cele de broccoli, iar frunzele sunt usor amarui. 
Ingrediente: o legatura rapini (cam 500g), o conserva de fasole, 2-3 catei de usturoi, o bucatica mica, mica de ghimbir (merge si fara), 3 rosii uscate (sun- dried tomatoes), 2 linguri ulei de masline, cateva picaturi de sos chili, sare si piper dupa gust.

Mod de preparare: rapini se spala bine, se scurge de apa si se taie capetele care sunt mai lemnoase. Intr-o oala se pune la fiert apa cu putina sare. Se opareste rapini vreo 4-5 minute. Eu am taiat coditele si le-am pus intai, iar floretele si frunzele le-am lasat doar 3 minute. Se scurge de apa si se lasa deoparte. Intr-o cratita se pune uleiul (eu am pus si un pic de apa fierbinte) si se soteaza usturoiul taiat marunt si ghimbirul (daca folositi). Se adauga fasolea (spalata si strecurata) si rosiile uscate taiate marunt. Rosiile uscate se tin 2-3 minute in apa fierbinte cat sa le acopere. Daca le aveti la borcan, in ulei, nu mai este nevoie sa le tineti in apa. Eu am zdrobit  usor fasolea, dar puteti sa lasati boabele intregi. Se adauga si rapini si se condimenteaza cu sare, piper si sos chili. Se amesteca, se ia de pe foc si se serveste cu incredere 🙂
