Barcute de salata cu quinoa

Salata de quinoa cu peste, asezata in frunze mici de salata verde. Un aperitiv usor de facut, bun la gust, sanatos si nu foarte costisitor.
Va trebuie: doua capatani de salata verde cu frunzele mai tari. Alegeti frunzele mai mici, din interior, pentru barcute. Spalati salata si zvantati-o. Cateva frunze mai mari le puteti taia marunt pentru a le pune in salata de quinoa.

Reclame

Pentru salata de quinoa: o cana quinoa (cana de 250ml), 2 rosii, o tulpina de telina, 2-3 cepe verzi, 3-4 catei de usturoi, o bucata de peste prajit sau din conserva (eu am avut somon prajit), 2-3 frunze de salata, patrunjel proaspat tocat, sare si piper dupa gust, o lingura suc proaspat de lamaie.

Quinoa se fierbe conform instructiunilor de pe pachet. Telina si ceapa se taie fin, rosiile se taie cubulete (evitati partea cu samburi), usturoiul de toaca si el cat mai marunt. Taiati pestele in cubulete mici si cele 2-3 frunze de salata in fasii. Amestecati toate ingredientele cu quinoa. Potriviti de sare si piper si puneti sucul de lamaie si patrunjelul. 

Umpleti barcutele de salata cu cate o lingura de salata de quinoa si serviti.
